How do we know that believers are not truly dead when they die?

Believers do not truly die but pass from death unto life.

In John 5:24, Jesus assures us that he who hears His word and believes in Him has everlasting life and shall not come into condemnation but is passed from death unto life. This means that while the physical body dies, the believer's spirit continues to live in the presence of Christ. Thus, for the believer, death is merely a passage to a more glorious existence, often referred to as 'rest' in biblical theology.
