Why did Hanun humiliate David's servants?

Answered in 1 source

Hanun humiliated David's servants due to a misunderstanding and contempt for David's intentions.

The humiliation of David's servants by Hanun stemmed from the counsel of his princes, who questioned David's motives. They suggested that David had sent his servants not to honor Nahash but to spy out the land and seek an opportunity for conquest. Acting on this misguided counsel, Hanun shaved half of their beards and cut their garments in a grave act of disrespect, which illustrates the dangers of suspicion and misunderstanding in relationships. Such contempt is ultimately a reflection of one’s disdain for authority and trust.
