How do we know that Christ's sacrifice is sufficient for sin?

Christ's sacrifice is sufficient because He fulfilled God's justice and secured eternal righteousness by conquering sin through His death.

The sufficiency of Christ's sacrifice lies in His fulfillment of God's justice by taking on the punishment deserved for sin. The law demands perfect obedience, and since all have sinned, only through Christ's perfect obedience can righteousness be attained. As Romans 5:18 illustrates, salvation comes through the righteousness of one, meaning Christ's obedient life and sacrificial death are the only means by which sinners can be justified before a holy God. He has indeed conquered our sin, and His victory is assured through His resurrection.
